Cucumber, Avo and Radish Salad


One of the freshest, most rejuvenating salads I've had. I honestly can't get enough of the stuff! And it's super high in nutrients (especially potassium, fibre, vitamin C, magnesium) and low in calories! The truffle oil and natural oils in the avo are so great for the skin and hair.

It really compliments red meat, especially beef and lamb!


Ingredients:
1 cucumber
1 radish
1/2 avocado
a pinch of salt
a pinch of pepper
1 teaspoon of truffle pol
1 teaspoon of chia seeds
a small handful of pine-nuts
a few almonds

Method:
Cut the cucumber and radish into thin slices
Cut the avo into cubes
Roughly chop the almonds
Place the avo, cucumber and radish into a bowl
Add the salt, pepper, pine-nuts, roughly chopped almonds, chia seeds and truffle oil.
Mix and serve!


This serves one, so double up for two, or quadriple for a fam! Enjoy! x
